    <directions>Saute squash ans spinch in pan with olive oil, add minced garlic if desired.
Spread small amount goat cheese onto two tortillas, place one into heated lightly greased pan cheese side up, sprinkle lightly with red pepper depending on how hot you like it, spread out spinach and sauteed squash in a thin layer. Place the second torilla on top cheese side down.  Brown on one side then flip while holding together.  brown on other side, serve cut into wedges with pizza cutter.  good with yogurt or sour cream and salsa.</directions>
