My Puerto Rican grandmother (born and raised in Aibonito, PR) uses this as the base for all of her meat marinades. It works for chicken, beef, or pork.
In a blender or food processor, combine olive oil, garlic, salt, and pepper. Process for 3 to 5 minutes.
This is a great base marinade. You can add fresh or dry herbs. Oregano and cilantro are both used frequently in Puerto Rican cooking and would taste great in this. Enjoy
