Combine
1.5 lbs of ground beef or lamb
1 cup crushed crackers, breadcrumbs or cooked grains
1 large egg
Lots of garlic and/or chopped onions
1/4 Cup or so of "add-ins" - Chopped mushrooms and celery are good,as are red bell peppers, diced carrots, zucchini, maybe some chiles, you name it....
Seasoning (salt, pepper, decent amount of marjoram or oregano, or other herbs or spices of your choice, parmesan or other cheese, parsely, etc.)
Enough liquid or sauce to make mixture pliable (Ketchup, tomato sauce, soy or teriyaki sauce, steak sauce, or a moderate salsa are all good choices. Add a few tablespoons of ice water if the sauce you use is strong.)
Mold into a loaf pan, baste with a bit more of the liquid and maybe sprinkle with some of the breadcrumbs and/or cheese to make a light crust. Bake at 375 degrees for 45 min. to an hour.
