just like mama used to make...kinda.

Instructions
You'll need:
9X9 casserole dish.
16 oz dry GF noodles (I used elbow noodles) , cooked per directions on bag.
***I use pasta Joy (ricepasta.com), best consistency and though
the water gets cloudy the noodles don't get mushy.
Tuna Sauce

1 can tuna, drained
1 GF veggie bouillon cube
1/2 tsp Basil
1 pinch rubbed Sage
1/2 tsp Thyme
1/4 tsp Tumeric
Adobo seasoning (or for less salt use garlic and onion powder and add salt to taste)
or Herbamare seasoning to taste.
3 Tbs Butter
3 Tbs GF baking flour
3 cubes trader joe's crushed garlic
or 3 cloves fresh crushed garlic.
1-2 c milk of choice (I used Trader Joe's Original rice milk, it's not as sweet as Rice dream and it's cheaper!)
3/4 c shredded mozzarella
*Spices can and should be adjusted to taste. This is just a rough guideline.
Open and drain tuna, use fork to make pieces smaller, set aside.
Add flour to pan and toast on med low heat until warmed, stirring occasionally.
Add Butter, spices and trader Joe's garlic and mix over med heat till it forms a crumbly mixture, begin whisking milk into mixture. If using fresh garlic, add now. Continue slowly adding milk and mixing until milk is incorporated and mixture is smooth. Add tuna and cheese stirring until cheese is melted. Stir in frozen peas. Simmer 10 minutes or until peas are heated through, stirring occasionally.
Add Tuna sauce to cooked noodles, cover pan and bake at 350F for 20 minutes. Take off cover, add 1/2 c shredded mozzarella to top. Bake about 10 minutes or until cheese is melted. Add a few more minutes if you liked the cheese browned.
P.S. Many of the ingredients in here are very healthy for you. For example, Garlic is an immune booster and turmeric is great for inflammation, especially of the digestive tract.
This is also a great recipe for those that have switched to organic milk products as it stretches the ingredient through a meal. Organic Dairy is expensive, but Conventional Dairy is the one product with the highest concentration of pesticides. So if you were to only pick one thing to buy organic, this would have the biggest impact in your life.
