Seitan Green Bean Curry

Description
This is one of my all-time favorite recipes. Spicy yet not over the top. Easy, never fails to make me salivate- a perennial favorite.
Ingredients
| 2 | chopped onions, fair sized. | |
| 1 | T | minced garlic |
| 1 | T | oil- i usually use sunflower but it really doesn't matter. |
| 4 | t | garam masala- this spice is cruical to the recipe- find it at an indian food store, a big bag is cheap |
| 1 | t | ground cumin |
| 1 | pk | frozen green beans- one lb. |
| 1 | lb | frozen seitan |
| 16 | oz | chopped tomatoes, with liquid from the can or you could use fresh if it's summertime |
| 1 | cn | (at least 1 cup) coconut milk. |
| 1 | T | yogurt, soy or milk-based (optional) |
Instructions
Start defrosting frozen pounder of seitan in your microwave. While doing this (takes like 7 or so minutes depending on your machine) chop up your onions and your garlic, get your spices down from the cupboard. I use an electric wok for this but a large whatever would work- start sauteing the onions and garlic in oil, when the onions start to get translucent add the spices- meanwhile you have chopped up the defrosted seitan into cubes or shredded it or whatever- add the seitan and the coconut milk to the mix- then rip open and pour the frozen beans in- add the can of crushed tomatoes, cover and let simmer for about 10 minutes or until everything is thoroughly saturate and cooked. Put it in a dish, put a dollop of soy or dairy yogurt on it- or better yet, scoop out the not liquidy stuff into a whole wheat wrap, fold and eat with yogurt in a bowl on the side. This recipe freezes well, tastes even tastier the next day, and is highly addictive.
people sensitive to wheat gluten can't have that right? i've actually never had seitan for that reason. when i eat those mock chicken and stuff with "vital wheat gluten" in the ingredients, my gut blows up like a balloon.
