Description

Wonderful little pancakes for lunch or as fingerfood for parties!

Ingredients

330 g
corn kernels, fresh or frozen
2  
eggs
200 g
Sour cream or plain yogurt
  T
flour
1 T
grated cheese
   
salt
   
herbs provence style

Instructions

Mix corn, eggs, sour cream, and flour until you get a pancake dough (didn't measure the flour but you certainly need about 10 tablespoons). Add the grated cheese (parmesan) and herbs.
Bake small pancakes.
Should be wonderful with lax or other smoked fish or bacon or ham or tofu. We had it as lunch but it would be a great food for parties.
As a dip I would recommend tsatsiki or ketchup and curry dip.

I have never tried Corn Pancakes but I will need to give this a try. I would definitely add the bacon.
