Description
The tastiest cake ever. Swear!
Ingredients
| 2 | c | flour |
| 2 | c | sugar |
| 2 | t | Baking Soda |
| 1 | c | oil |
| 3 | eggs | |
| 2 | t | vanilla |
| 1 1⁄2 | c | steamed carrots |
| 1 | c | Shredded Coconut |
| 3⁄4 | c | strained / chopped pineapple |
Notes
I always, always double the recipe so I can make a cake & a ton of cupcakes to freeze for later. I always make extra frosting so I can stand around eating it off a spoon or my finger all day 
The cake is super moist & excellent served alone too. Enjoy!
Instructions
oven at 350, mix dy ingredients, then add wet ones. Bake about an hour, checking for done-ness here & there towards the end. FROSTING RECIPE:
4 oz cream cheese/ room temp
3 tablespoons butter/ also room temp
1.5 cups powdered sugar
1/2 tsp vanilla
juice of 1/4 lemon
Blend the ingredients till you have a smootth, thick frosting.
