food questions

my mind has gone blank. for some reason i've forgotten how to feed my 2 year old. i need some inspiration. i do a lot of baking myself so any recipes (especially ones that include hidden veggies or protein) would be so very helpful. i'm going to be looking after kids again after the may long weekend (which is this weekend coming up), and i need to be able to feed them.

i'd love your imput!

This is a whacky toddler fav in our house right now: slice and fry banana and apple in coconut oil and butter. She loves it and it keeps her going!

Dude, do not forget about hummus! We also eat a lot of edamame (unshelled) during the day. I will sometimes cook some and leave it out in a bowl all day and we both munch on it.

I make a batch of hummus & tabouli every week & we snack on it all.the.time. Hummus is especilly good when rolled in a wheat tortilla with shredded carrots, zuchinni, and collard greens like wrap. Kids really dig it ( so do grown ups... sometimes in excess...)

I know that there is a book out there by Jessica Seinfeld that my friend just bought. try checking out at the library. I think it is called deceptively delicious ( something or other). in any case, It is all about steaming & then puree-ing vegetables once a week and sealing it up in the fridge, then adding the puree to all kinds of tasty/ child friendly meals. I took a look at it & was really inspired. Some of her stuff looks pretty damn good. I personally make alot of whole wheat pizza dough, fresh tomato sauce and loaded with chopped raw vegetable pizza. I chop stuff like collard greens & Kale really fine & he'd never guess. I let the kids help measure the ingredients for dough and I shape out small six inch sized pizzas that they can do up themselves with the veggies I have set out. I also stick with what ascedarleaf calls a plow man's lunch: all kinds of healthy ( yet seemingly unrelated) foods just set out snack style. A good example of a plowman's lunch might be this:
a bit of scrambled egg (OR TOFU), a handful of fresh peas, a few nuts, or a slice of turkey, a few orange slices, maybe a few whole wheat crackers and a glass of water. Just a nice well balanced variety of nibbler type stuff can make a great kid meal when you are uninspired to make some huge production. Oh! I just thought of something else... check out the HM recipes. there are some really great ideas there.

I got it for X-Mas from my mom and its AWESOME. DH and I hate veggies, but if they're hidden... we'll eat 'em up. So far, my fav recipe is the beef stew, It has broccoli but you totally can't taste it. DH announced that he fully supports my hiding veggies in his food and not telling him.
