Hi everyone. I've decided that I want to keep track of what I make for dinner so that I can make sure that I don't fall into the "I don't know what to make for dinner" rut.
See, I work full time and have 3 kids but still find it important to have a good meal every night. Most nights I cook, but some I don't. My older 2 children spend 3 or 4 nights with me a week, rotating. Some weeks I work only 40 hours, but some I work almost 50 hours, so I will take short cuts some nights. However, it is easy to forget what is quick, what is simple, what went over well and what didn't. I do keep in mind what everyone likes/will eat, but I won't make special meals for anyone (except maybe the baby, but not as much anymore). However, if the kids really don't like something, I'm willing to negotiate a bit. I will also make sure that there is always a vegetarian option to any meat that I might cook. Family meals are really important to me and if my job continues to stay super stressful, I don't want my family dinner getting compromised in the mix.

this stumps me every night

i swear, every night we stumble over what to have for dinner. i suppose it's one of those things that with time you get figured out, but right now it seems like a struggle to make sure everyone's fed with healthy food that they like.

i read your post and about blew tea out of my nose. Our standard "I don't feel like being creative, just make something" dinner is pasta, broccoli and tempeh. seriously...

the kiddo doesn't like any of his foods "mixed" so dinners are usually really boring around here. we're vegetarian which makes it difficult to get all the necessary protein. but he LOVES tempeh, ADORES broccoli, and DEVOURS pasta. So, we end up having this same dinner more nights than not. I try to get creative with each dish (pesto, lemon or garlic pasta - sauteed, baked, marinated tempeh) but at the core it's the same three foods all the time. it's easier for me to make it over and over and know that he's getting good healthy food that he'll eat up than to try and push for new foods.

oh, and, i really hate cooking most of the time. trying new recipes is like a punishment to me.
