Description

For the butter I used the non dairy kind found at Sprouts or Whole Foods called Earth Balance

Ingredients

1 1⁄2 c
Rice Flour I used white
1 t
salt
3⁄4 c
Non Dairy Butter like Earth Balance
3⁄4 c
sugar
1 t
Vanilla extract or Rum extract

Instructions

Mix the flour and the salt together and set aside. In a different bowl mix together the "butter" and the sugar until fluffy with a an electric mixer. Add Vanilla OR the Rum extract to the butter mixture and slowly add the flour, mixing to form a dough. Once you have the dough, form it into a ball and cover it in plastic wrap. Refridgerate for 2 hours.
Roll the dough out until it's about 1/4 of an inch thick and use a round cookie cutter to cut cookies. Bake at 350 for 15 min.
