I have a quart of Land O Lakes half and half - I bought it for 39 cents! - that is approaching it's due date. I don't think I can drink it in my coffee fast enough. Anyone have a recipe they recommend?

i use it in baking and half

i use it in baking and half the recipe for milk and use the other half water. Works with everything.

that recipe i posted in your raw milk post for quiche can use up all the 1/2n1/2, and you can make up the difference in milk.

Here are the proportions paula deen uses for hers -- the recipe is for spinach and bacon but I would say get the liquids right and then add veggies as you wish and as they fit in the crust -- substitute/reinvent as necessary:

use 6 eggs, 1.5 cups of half/half (a lot of recipes call for heavy cream but you can use half & half -- my mom uses lowfat milk but she's nuts), 1.5 cups shredded swiss cheese (you can mix cheeses here, parmesan is a good combiner) and a pie crust.

Layer the solid things (cheese and veggies -- spinach, broccoli, onions, olives, corn, whatever -- there are many combinations that work well here) on the bottom of the crust and then pour the wet stuff on top. Bake for 35-45 in a 375 degree oven. Oh, and it works best if you bake the crust a bit first because it makes it less soggy.
