Description
a salad. good for picnics and potlucks.
Ingredients
- 2 6” cucumbers: peeled, seeded and diced
- 6 ripe medium tomatoes
- minced red onion
- 6 sliced radishes
- 2 scallions, minced (include greens)
- 1 small bell pepper, minced (any color)
- 1 large dill pickle (I often leave this out)
- sliced green pimento-stuffed olives
- minced parsley
- extra-virgin olive oil,
Instructions
not enough ingredient lines, also add:
juice from one large lemon
salt and pepper to taste
Cut the tomatoes in half. Squeeze out and discard the seeds. Cut the tomatoes into 1” chunks, and transfer to a medium-large bowl.
Add everything else, and toss gently till well mingled. Taste and adjust the seasonings.
