Ingredients

  • 1pk active dry yeast
  • 1.5c warm water
  • 1T sugar
  • 2.5t sea salt
  • 3c all purpose flour
  • 1c whole wheat flour
  • 3clv garlic, minced

Instructions

in a large bowl combine the yeast, 1/4 cup of the water, and the sugar. Wisk and let sit for ten minutes. Add the salt, water wisk until dissolved and then stir in the flours with your hands (everything tastes better when you stir it with your hands) dump onto a floured surface and add the garlic and/or whatever other add-ins you want (finely chopped sundried tomatoes, olives, whatevea) kneed for about 10 minutes, until smooth and elastic, add more flour in small quantities as needed. Lightly coat your bowl in oil and then roll the dough ball around until it's evenly coated. Cover and let it rise for 1 and a half hours.
Preheat your oven to 400 f. Punch down the dough and kneed out bubbles. On a floured surface, shape into a large loaf and slash top 5 or 6 times. Lightly dust the top with flour then let it rise another 15 minutes. Bake about 20 minutes and let it sit 10 before cutting.
