Last night I made the most bland chicken bake. I'm trying to make up for it tonight with LOTS of flavor.
I'm baking pork tenderloins that have been marinating in a Puerto Rican marinade that is to DIE for. Very easy.
Then I'm making a Santa Fe Rice salad. It's brown rice with scallions, black beans, and tomatoes. The sauce is oil, vinegar, sugar and chopped jalapeños. Then it's topped with sliced avocado. Yum.

P.S. The bland chicken bake made a delicious chicken salad today.

Hot dogs... Maggie was

Hot dogs... Maggie was thrilled.
I also made some yummy greens and garlic bread.

Greens:
Sautee onion, garlic, olive oil
Add can of mixed greens, and Tony's(best seasoning ever)
Add fresh spinach
Simmer until spinach is cooked
Add balsalmic vinegar and apple cider vinegar.
Enjoy. If you like cooked spinach it rocks. Trust me.

chicken enchiladas

Yellow rice and refried beans

in the oven right now and it smells wonderful! Oh and the chicken in the enchiladas are from a bland crockpot chicken. Well not too bland since I tripped up on the garlic powder and it had 2 onions in with it. I plan on a side of jalapenos, getting out the vodka (sorry, don't do tequila anymore) and having a good time.

farfalle with smoked salmon

farfalle with smoked salmon and cream cheese. this is the easiest, fastest most delicious supper.
just boil the farfalle until it is al dente, reserve a 1/2 cup of the water then add a thinly chopped red onion to the pasta. Drain and add 2 ounces of cream cheese and toss until it is saucey (just like me!) adding reserved water if neccessary. toss in a half cup of chopped dill, 2 tablespoons of capers and 4 ounces of smoked salmon cut up into tiny pieces. Voila! dinner is ready.

Chicken borscht (the

Chicken borscht (the cabbagey mennonite version, not the beety one) from the freezer, chicken rice soup for the non borscht inclined--also from the freezer and sunflower seed whole wheat bread that I made it with Devon and Flora today--it's dense but tasty. Oh, and some of Alfred's wine.
