Best Summer Party menu ever... hit me, mamas, please!

I am planning a big family party this weekend and I want to have the greatest menu ever.

What's the best outdoor summer party menu you've ever had?

(and oh yea, cheap and easy a BIG PLUS).

Pea salad

reposting this from the protein, please thread:
Sautee til soft and golden:
a plum sized white onion, diced
a garlic clove, diced
2 TB olive oil
Add to sautee:
1.5 cups frozen peas
1 cup frozen shelled edamame
1 cup snow peas (de-stringed)
1 cup sugar snap peas
In bowl mix this awesome delicious flavor blend which you will go nuts over:
1 lemon's juice
1/4 cup olive oil (minus the 2 TB you used for sautee)
1 tsp dijon mustard
1/2 small log goat cheese, crumbled
2 tsp fresh mint, chopped
salt & pepper
Add sautee to bowl, mix til coated, serve warm, room temp, or cold.
I just made this for dinner last night. It's from a vegetarian cooking class I took at a culinary institute

fajitas!!

our favorite summer cookout is excellent grilled veggie fajitas. we have a grilling basket so we do portabellas, thin sliced onion and red/yellow/orange peppers-marinaded in an oil/cumin/coriander/cayenne/salt/garlic powder marinade, nothing else.

make a serving area with
-tortillas
-seasoned rice
-home made guacamole (lots of lime please!)
-refried beans
-homemade mango salsa (love this stuff!!)
-toppings-sour cream, cheese

make my favorite beans: i use pinto beans and sautee in onions, epazote spice, a touch of cinammon, garlic and olive oil, just a touch.

your strawberry sangria would go perfectly! and don't forget cerveza with lime.

Ohh, I love BBQ parties

Alfred built us a bread oven in the back yard and we used it to make pizzas at our last outdoor party (my god, was that a year ago?). You can do them on the BBQ too. you just brush the rolled out dough with oil and put it oil side down on the hot grill. Cook until the bottom is crusty (brush the other side with oil) and flip it over. Quickly put some sauce, cheese and toppings on and close the grill lid for a few minutes. Open up the lid and voila--quick pizza. It's fun to have everyone bring their favorite toppings to the party and to let everyone dress their pizzas themselves. Cheap too.
The other thing we do is just your basic watermelon, beer, potato salad, fresh buns, and bbq'd meaty stuff. It's also fun.

they'll be laughing at first, until they TASTE them

1. bag of mini-pretzels (I used Snyder's grid-shaped ones).
2. bag of Rolos (yes, that's right, the candy).
3. bag of pecan halves

Set oven to 250. On parchment paper, lay out pretzels in one layer with a rolo on top. Put in oven about 10 mins. The Rolos will look shiny but not melted. Beware! They are soft, though. Take them out and (relatively quickly) carefully press down a pecan half on each one). Put in fridge to cool about 20 mins.

I'm not kidding, these are awesome and obviously very easy!

I like a make your own buffet, provide the skewers and cut up peices of
meat
tomatoe
peppers
red onion
tofu
for the barB.
Then for dessert the same idea but put out chunks of melon, strawberry, grapes, pineapple mango and serve with a cold yogurt/whip cream dip yum.
So good chocolate supreme is tasting good right now too!

i'm a mexican-y food type of person

1)guacomole:
a couple ripe avocados
mash up, squeeze in some lemon juice, garlic salt, salt and pepper. mix togther, but keep it chunky! add diced tomatoes.
2)seafood(i don't know the name of this):
get big bag o' mixed shellfish
put in ceramic baking dish, with lots of lemons chopped up, fresh garlic chopped up, tomatoes chopped up, some cilantro, some onions, bake until done(sorry, i've always guessed at temp/time...maybe 350f?)
throw in some ceviche, some pico de gallo and chips, sangria, beer...mm mm mm! i'll be over in a flash!

Hmmmmm....

Here's a few yummy ideas:
1. Chips and hummus and/or bean dip
2. Fruit salad
3. Red skinned potato salad
4. Grilled veggie shish-ka-bobs
5. Big ol' watermelon-summer picnic would not be complete without one
6. Pie ala mode!

Mmmmmm! I love summer meals. I have the recipes to the bean dip, fruit and potato salad. They are wonderful and have been a hit with anyone who has had them. Tell me if any of them sound good and I will find the recipes.(I should have them memorized, but i don't)
