Description
Sauté onion in butter until tender. Stir in
zucchini and chicken broth. Simmer about 15
minutes, covered.
Add seasonings; puree and return to pot. Add cream; heat through.
Makes 4 to 5 servings.
ps. I added more pepper and served it with shredded parmesan cheese on top for added calories. YUMMMMM!

1/3 C butter
2 1/5 C shredded Zucchini
2 1/5 C chicken broth
1/2 tsp each dried basil, salt and pepper, to taste
1/4 tsp nutmeg
1 cup cream (I used heavy whipping cream)
