Watermelon Mint Salad

Description

Chop everything up and throw it into a big bowl.
Mix the olive oil and lemon juice together and drizzle over salad; toss to combine.
Refrigerate and let chill about an hour or so.

The ingredient amounts don't have to be exact by any means - i swear it ends up a bit different every time i make it. if you like/don't like any of the ingredients lessen/add however much you like.

Half of Watermelon, seeded and chopped

half cup Feta cheese

half cup black olives, sliced

half cup red onion, chopped

About a tablespoon of chopped fresh mint

1/4 cup olive oil

1 tablespoon lemon juice (fresh or bottled)

Thanks for sharing. So often I try a new recipe with high hopes and am disappointed, but this was just as good & easy as it sounded!
