Description
This is a nice side dish to use up all that garden squash. The poblano pepper adds a little heat to it so measure accordingly. Really good with tortillas or maybe try with pita bread.
Heat oil in skillet.
Add onion & garlic and cook until translucent.
Add Zucchini (or squash) & poblano pepper and cook until soft.
Add corn and beans and cook until heated through.
