baking mamas! help me out!

i'm a novice baker-- neigh, a shitty and inexperienced baker-- and i'm looking for a simple recipe for organic chocolate cupcakes and white frosting (that i can color) that i hopefully won't be able to fuck up. i don't even have a frigging mixer, so i'll probably have to get my hands on a cheap hand-held one, right? and do you luscious cupcake bakin' mamas have any tips for me to lessen the chances that this'll turn into a disaster?? i'm not kidding-- when it comes to baking, things like fire alarms going off and forgetting to use eggs are common occurences for me. anything you have to offer would be wonderful, since these will be for my little one's upcoming third birthday party!

i say buy an organic chocolate cake mix. really! it is hard to bake from scratch, even with practice!

This blog is awesome for cupcakes, just google chockylit if you wanna check out all the recipes--I think a mix would be fine then you can scratch make the frosting.

I love cupcakes, I just made some today and last Friday that I posted on my FB page.

Vanilla Buttercream Frosting

1 stick (1/2 cup) unsalted butter, room temperature
1 tablespoon milk
1 teaspoon vanilla extract
2-3 cups powdered sugar

1. Using an electric mixer, beat the butter at medium speed until creamy.
2. Add the milk, vanilla extract, and 2 cups of powdered sugar and beat at low speed, occasionally stopping to scrape the sides and bottom of the bowl, until light and fluffy. Add more powdered sugar to arrive at the consistency and sweetness you like.
